As summer starts to heat up across the US, it’s nice to have a cold, refreshing treat. And with the economy the way it is, a homemade granita fits the bill perfectly. Granita is a frozen dessert made of sugar, water, and flavorings or fruit. It has a texture similar to a snow cone. Originating in Sicily. I’ve made some delicious granita before with watermelon, rhubarb or espresso, but since we’re in Thailand, I thought I’d try something more exotic. Enter the Dragon… well, fruit anyway. This wacky looking fruit has very subtle flavours (a nice way of saying bland), so I thought it would be perfect to spruce up as a granita!

Bright and early on Monday morning (we’re talking 5:30 am) we met up with a whole group of blue-shirt clad church members to go to the second campus of Ramkhamhaeng University on the other side of town. We loaded up the van and two pick-up trucks with what seemed to be a random assortment of things. It wasn’t until we got there and saw how things were being set up that we understood how they all fit together…

Eating out seems to be the way to go around here. With full meals for as little as 80 cents on the street, and all you can eat for an hour for $8.00 (I was very excited to discover that sushi restaurant!), it leaves very little motivation to cook. My ladies class confirmed that if you’re only cooking for two, eating on the street is cheaper than buying groceries. Here are things that stand out when you first get to Thailand…
