If you asked most Thais what is the best Thai food they will say Tom yum, even though the first thing a Westerner thinks is Pad Thai. Having lived here for a year, I’m likely to agree with the Thais. It’s SO flavourful. Yesterday, we learned how to make it. Tom yum means boiled, with a lot of ingredients, and spicy. And that’s exactly what it is. A good tom yum is a balance of salty, sour, sweet, and spicy.

As crazy as it seems, less than two weeks from now we’ll be saying goodbyes and getting on a plane on our journey back to the US. It’s a little surreal to pack our stuff up and begin to orient our minds towards life stateside. This morning while walking back from the store, I was approached by a teenager. “Excuse me… Songkran…” He said apologetically while pouring ice water all down the front of my shirt. I’m guessing you’ve probably not only heard this song, but sung it at church. Maybe even with pictures of your specific city floating behind the lyrics- like we did in Fort Wayne. Chris Tomlin’s version is probably the most popular one, but the song was actually written by a band called Bluetree from Northern Ireland.
