Food Friday: Nam Prik

So we all know Thai food equals spicy food. That’s the main reason many Americans are afraid to venture into their local Thai eatery. This isn’t the post to dispel those thoughts, though. Nam Prik is a chili paste served with (of course) rice and other dishes. The literal translation is “liquid peppers”. In 2007 “a mysterious cloud of acrid smoke” caused London police to evacuate homes and businesses in the heart of Soho, fearing a chemical attack or a dangerous toxic leak. It turns out it was just a Thai restaurant making their nam prik. Talk about bragging rights for that restaurant!

Food Friday: Rice and a Little Piece of Meat

Monday evening, we arrived in Mae Sot- a city on the Thailand/Myanmar (Burma) border. Our time here has been jam-packed with learning about the trials of the people in the area and the ministries to reach out to them. Behind the Mae Sot Foursquare Church is a school for migrant children. At first glance, you wouldn’t recognize it as a school.

Food Friday: My Pad Thai

In my short time here, one thing that has stood out to me in Thai cuisine is the mixing of the basic tastes (sweetness, bitterness, sourness and saltiness… plus spiciness!). I’ve been surprised several times by some random combination of those five tastes in one dish (but not always in a pleasant way). So it’s interesting that the dish Thailand is known for in the West is Pad Thai, because it combines all of those things in one tasty meal.

Food Friday: Dragon Fruit Granita

As summer starts to heat up across the US, it’s nice to have a cold, refreshing treat. And with the economy the way it is, a homemade granita fits the bill perfectly. Granita is a frozen dessert made of sugar, water, and flavorings or fruit. It has a texture similar to a snow cone. Originating in Sicily. I’ve made some delicious granita before with watermelon, rhubarb or espresso, but since we’re in Thailand, I thought I’d try something more exotic. Enter the Dragon… well, fruit anyway. This wacky looking fruit has very subtle flavours (a nice way of saying bland), so I thought it would be perfect to spruce up as a granita!
